Night Owl Decaf

Decaffeinated by the sugarcane ethyl acetate method in Colombia, which uses a compound derived from fermented cane rather than a synthetic solvent. It is gentler on the coffee than most alternatives and you can taste the difference.

In the cup

Cocoa and dried fig, with a soft acidity. It does not taste hollowed out, which is the usual complaint about decaf and a fair one.

Brewing

Grind a little finer than you would the caffeinated equivalent - decaffeinated beans are more brittle and extract faster.
